The roots of the pistachio come from long-ago Persia. They were
considered to bring love to the couples that enjoyed the captivating
taste of the pistachio. The cracking of shells were heard as lovers strolled
through the pistachio gardens.
Pistachios are natural in color with green nut meats and are generally
processed by soaking in brine, then placed on trays to dry in the hot sun.
The finest pistachios are natural in color and naturally opened. Red pistachios
and machine opened nuts are generally done to hide imperfections in the shell of
the nut and improperly kept trees. Other pistachio uses are the raw pistachio nut
meats which are chosen for baking, salads, dessert toppings, dressings
for fowl & ice cream.
Grades of pistachios fall into count per ounce, 15-17, 18-20, 21-25 & 26-30.
The larger sizes are flavorfully preferred. Those pistachios are from
mature trees which are properly irrigated. Iran annually produces 200,000 tons
of pistachios whereas the US produces only 80,000 tons.
