Pecans generally cultivated in the Southern regions, in moist rich soil,
and are highly sought after for snacking, pecan pies, pecan cakes, pecan breads,
dessert toppings and often sprinkled in cereal, on pancakes and on waffles.
Pecan grades include Mammoth pecan halves, Junior Mammoth pecan halves, chipped
pecans, pecan meal and Inshell Pecans. Pecans store well in airtight containers
cool or frozen, retaining their fresh picked goodness for up to a year.
The finest pecan meats are lighter in color, have a 6/8% moisture
content and will equal more than 50% of the nut's weight in nutmeat. The
harvest season is Oct/Nov. When roasted, the preferred oil is peanut.
